Balsamic Maple Dressing

Try this easy, sweet dressing for a twist on a favorite. Made with pure Brantview Farms Maple syrup, this Balsamic pairs nicely with a fresh spinach salad, topped with walnuts and some blue cheese crumbles.

 

Ingredients:

Dressing

4 tsp olive oil

2 T balsamic vinegar

1/4 tsp nutmeg

1 T plain low-fat greek yogurt


Salad

2 pounds spinach

1 1/2 cups sliced cucumber

1 1/2 cups grape tomatoes

1/4 cup chopped walnuts

1/4 cup blue cheese crumbles

1/2 cup sliced red onion (optional)

A bowl of green spinach, sliced cucumbers, cherry red tomatoes, brown chopped walnuts and crumbles of white cheese sit on a brown wooden table. A silver fork sits beside the bowl on the table.  A brown dressing is applied to the top of the fresh salad.
Blue Cheese Walnut Spinach Salad with Balsamic Maple Dressing

Directions:

Combine dressing ingredients in blender. Chill dressing in advance. Dressing recipe can be doubled easily for larger salad. Toss spinach in dressing and mound 2 cups onto plate or bowl. Layer vegetables, walnuts and blue cheese crumbles. Serve.
