Maple Rice Pudding is a slight twist on the classic vanilla. Who doesn't like warm (or cold) rice pudding? Sweet, creamy rice pudding with a light maple flavoring makes this dish special. Made with pure Brantview Farms Maple sugar and syrup, try this favorite with a special maple twist.
Ingredients:
1/2 cup rice, uncooked
1 cup water
dash of salt
2 cups milk (split)
1/4 cup pure Brantview Farms Maple sugar
2 eggs - yolks only
1/2 cup pure Brantview Farms Maple syrup
1/2 tsp vanilla extract
1/4 tsp nutmeg
1/4 tsp cinnamon

Directions:
Place rice, water and salt in a pan and bring to boil. Cook for 15 minutes or until rice is tender and water is mostly absorbed. Add 1/4 cup of maple sugar and 1 cup of milk to rice and continue to cook. In separate bowl, combine 1 cup of milk with 2 egg yolks. When milk and rice mixture begins to thicken, add milk and egg mixture and continue to stir. Then add 1/4 cup of maple syrup, nutmeg and cinnamon. Continue to cook and mix the rice until reaching desired thickness. Remove from heat and add 1/2 tsp of vanilla to pudding, continuing to mix.
Serve maple rice pudding hot or let cool and place in fridge to serve chilled.
