Peanut Butter Cookies (2 Ingredients!)

A peanut butter cookie without all the sugar and flour and butter? Ok, our interest is peaked. What makes it even better is that the sweet in this nutty cookie is our 100% pure maple syrup! That's it. Natural creamy peanut butter and nature's maple syrup. They aren't your traditional peanut butter cookie, they have way more peanut butter flavor! The sweetness factor is all dependent on how much maple syrup you use. So give these low sugar, two ingredient peanut butter cookies a whirl!

 

Ingredients:

1 cup creamy natural unsweetened peanut butter (look at ingredients to make sure it only lists nuts and salt!)

Directions:

Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Mix peanut butter and maple syrup together in a bowl. The batter will be very wet initially but will thicken as you continue to mix until resembling cookie dough. Once firm enough to scoop and mold with hands, place balls 2 inches apart on sheet. Note that if you wish to have a sweeter cookie, try increasing your amount of maple syrup. For our cookies we doubled the maple syrup! Bake the cookies for 10-12 minutes or until surface of cookies look dry. The cookies will still be soft coming out of the oven, but once cool they will firm. Let the cookies cool on the baking sheet completely before transferring them, otherwise they will break and fall apart.
