Strawberry Oatmeal Bars

Strawberry Oatmeal Bars are like overnight oats and then some! With nuts, fruit and sweet pure Brantview Farms Maple syrup and sugar on the ingredient list, these bars are sweet and filling for breakfast or a snack on the go. The bars can be served warm from the oven, reheated in the microwave or served cold from fridge making them a versatile option.

 

Ingredients:

2 cups old-fashioned rolled oats

1/2 cup chopped pecans

1 tsp baking powder

1 tsp cinnamon + more for dusting

1/4 tsp salt

2 cups milk

2 T butter, melted

2 eggs

1 1/2 cups sliced strawberries

nonstick cooking spray

Strawberry Oatmeal Bars make breakfast easy!

Directions:

Preheat oven to 350 degrees. Spray an 8x8 pan with cooking spray.

Stir oats, pecans, baking powder, cinnamon, and salt in large bowl.

In separate bowl whisk milk, eggs, butter and syrup*. Pour milk mixture over oats and stir well to combine. Stir in strawberries. Pour mixture into prepared pan. Dust with maple sugar and cinnamon. Bake for 35 minutes or until batter is set. Cut into squares and serve warm or cool and store in fridge up to four days.


These bars are easy to warm in microwave for 1 minute for a fast, delicious breakfast!


*These aren't overly sweet, so more syrup could be added to the recipe based on taste preference.
