Sweet Potato Casserole

A traditional sweet potato casserole is a staple of the holiday season. It is creamy and naturally sweet but made even better with the sweetness of our pure maple sugar! Share this recipe with your family for your next gathering and watch their eyes light up as they taste this savory, sweet side.

 

Ingredients:

2 1/2 lbs sweet potatoes, peeled and cut into 1 inch cubes

1/4 cup butter, softened

1 1/2 tsp salt

1/2 tsp vanilla extract

1/2 cup finely chopped Brantview Farms Maple pecans, divided

Cooking Spray

2 cups miniature marshmallows

Directions:

Preheat the oven to 375 degrees. Place the sweet potatoes in a pot with water and bring to a boil. Simmer in boiling water for 15 minutes or until potatoes are tender. Drain and cool potatoes slightly. Place the potatoes in a large bowl and add maple sugar, butter, salt and vanilla extract. Mash the sweet potatoes. Fold a 1/4 cup of the chopped maple pecans into the sweet potato mixture. Move the sweet potato mixture into a greased 11x7 baking dish. Sprinkle the remaining 1/4 cup of pecans on top, followed by the miniature marshmallows. Bake in oven for 25 minutes or until golden.
